Naturally sweet Peanut Butter Energy Balls

I am so excited to share my go-to recipe forPeanut Butter Energy Bites– they’re not only delicious but also packed with the energy boost we all need. Even if you’re not on the healthy eating train, these still make a mighty tasty snack or dessert when you need a quick fix. Theycome together in about 20 minutesand totally qualify as no-bake treats. Perfect little nuggets of sweet peanut butter heaven!

Peanut Butter Power Balls Ingredients

  • rolled oats– old fashioned roll oats to be exact
  • ground flax seeds
  • raw honey– local honey is always best, as well as raw and 100% pure
  • all natural peanut butter– the kind where the only ingredients are peanuts and salt – feel free to substitute another variety of nut butter if desired
  • peanut butter powder– I usedPB2 Powderbut there are tons on the market now
  • cinnamon
  • salt
  • vanilla extract
  • mini chocolate chips– optional, but oh so worth it

How To Make Peanut Butter Energy Bites

1. Prepare Baking Sheet

Prepare a largebaking sheetby lining withparchment paper.

2. Combine All Ingredients

Place all ingredients into alarge bowl and stir with a rubber spatulauntil all ingredients are moist and sticky. Using asmall cookie scoop, portion out energy bites into even balls.

3. Roll Into Balls

Roll between your lightly greased fingers, pushing ingredients towards themselves to form an even, tight ball. If you find that your mixture is too dry to form balls, try adding a little more peanut butter or honey until the consistency works. It’s difficult to give you exact measurements because the consistency of different brands of nut butters can vary greatly, so be flexible.

Place onto wax paperand continue this process until all energy bites are formed.

4. Refrigerate

Serve atroom temperatureorrefrigerateand store in an airtight container for up to one week.

The yield of this recipe depends on how large you roll your balls, but approximately you will get 12-15 large balls or 20-24 small balls.

Storing Peanut Butter Power Balls

You can leave Peanut Butter Balls out atroom temperature for an houror so, but if it’s any longer than that, I recommend youstore them in an airtight container in the fridge for up to one week.

To Freeze:Place the energy balls on a parchment paper-lined tray, ensuring they are not touching each other andpre-freeze for 2 hours.Transfer frozen balls to an airtight freezer safe container or zip top bag and store in freezer for up to 3 months.

To Thaw:Simply remove desired amount of energy balls from freezer andlet sit at room temperature for a few minutes. You can also enjoy them straight out of the freezer.
